Ginger Beer
put ginger, sugar and yeast in a bottle and BOOM you have ginger beer. thats the basic principle.
we started off doing it in the field (living in a van) and then we got a bit more organised and now we have a full on fermentaria where we make ginger beer, kombucha, yogurt, tempeh, sauerkraut, kimchi, kefir and more.
we make it the old school way letting wild yeasts do their thing which means every batch is a bit different - thats what makes it special.. its not perfectly consistent like the big brands but thats kind of the point
natural wild fermentation creates a potent probiotic potion that is both medicinal and usually delicious
every one of our batches is sung to by the brewers while stirring a vortex to bless the brew
hand-bottled with care and love to preserve the vibrant flavors. here we give the perfect amount of sugar to the yeast so it can give us lots of bubbles!
At the moment we dont have a proper shop, but you can visit the fermentaria in Coutada on Thursdays from 10am to 1pm. Or you can find us at the local market :)
